5When outdoor grilling isn't an option

I'm an outdoor grill cook -- big time. I got the Calphalon Grill Pan as a birthday present, and I must admit I wasn't too enthused. Why would you want to pretend to grill indoors, right?

Well, a nice steak and a rainy day gave me the opportunity to try my pan. I cooked the steak over medium heat on an electric range, and the results were fantastic. I ate the tenderest steak I've ever cooked on a stovetop, rivaling the tenderness I get from the grill. Sure, you can't mimic the flavor of cooking on an outdoor grill, but the look (grill marks) and tenderness were identical. I got a slightly sauteed taste because I had a trace of butter and oil in the pan -- enough to make a thin layer coating the bottom. The taste was definitely different from an outdoor grill, but regardless the meat tasted excellent. I seasoned it just like I would for the grill before cooking.

Being a natural skeptic, but enthused by the results with the steak, I decided to try the pan again cooking boneless chicken breasts. Same results! Super tender, juicy, and great looking meat came out of the pan. I'm sold. This is the pan for me when cooking grill meat indoors.

The secret to nonstick is to let the pan heat up fully over medium heat (no higher) before putting the meat in the pan. Putting a little butter and oil in the pan, and waiting until the butter turns golden brown lets you know when the pan is ready to use. Soaking the pan in warm water immediately after cooking makes for easy cleanup. Enjoy!

5Wonderful grill pan, easy to use, easy to clean!

I purchased this Calphalon Unison Nonstick 12 Inch Round Grill Pan along with the Calphalon Unison Nonstick 12 Inch Round Griddle Pan and love it! The "nonstick sear" surface used on this grill pan does just what it says, giving just enough grip to hold meat in place while still releasing easily when flipping the meat or removing it from the pan.

I will confess that I have not used this pan anywhere near as much as the griddle, but that is simply because we do not grill a lot of meats on the stove. I have done several steaks, however, and they came out juicy and delicious. I'm usually a picky eater and never eat the fat on a steak, but this pan cooked a ribeye so well that I ate the whole thing! The grill surface kept the meat from frying on the bottom, but it still retained plenty of moisture and all the flavor. (These steaks were not marinated, just seasoned with salt and pepper.)

The main points for this pan are:
* Nonstick (just enough grab for cooking meat, but nothing gets stuck to the pan)
* Oven-safe (have not tried this pan in the oven, only the griddle)
* Easy to clean (wipe with a paper towel first to get the grease)
* Handle stays cool while cooking (except in the oven)
* Large size can cook more food at once

While I have not tried cooking anything but steaks with this pan, it is by far the best grill pan I've tried. It probably won't see quite as much use as the griddle pan, but I don't see myself cooking a steak any other way from now on. Highly recommended.

Note: As with any nonstick cookware, avoid using metal cookware. I bought a set of silicone-coated tongs for flipping steaks and they work great.

3Low-quality Calphalon

This pan heats unevenly to the point where it simultaneously burns and undercooks food. We have not had this problem with our older Calphalon or All-Clad pans. The uneven heat distribution is undoubtedly related to the thickness of the aluminum. The bottom of the pan is 3.9mm thick. Our older Calphalon pans are 5.5mm thick--40% thicker! Indeed the pans feel lightweight and cheap, similar to non-stick pans you buy at the local supermarket. I suggest you avoid this pan and either buy a cheaper item of similar quality or hunt for better quality. This pan also has not done a great job at striping meat.

5Excellent Quality

I own several Lodge cast iron products and use them everyday. I have 3 teeneage boys that enjoy cooking, and after they destroyed a few teflon coated pans, I decided I would go heavy into cast iron. These pans are indestructible. You can use them in the oven or stovetop, and if you keep it seasoned properly food will not stick. Also, to avoid sticking problems, you may want to remember to allow the pan to get hot before applying oil or food.
As to seasoning, the Logic line now comes preseasoned. But don't make a big deal about this. To season a cast iron skillet simply coat it lightly with oil and bake it for a half hour or so. I have also seasoned these skillets on the stovetop. Cast iron is also great because it does not easily scrap like stainless steel and aluminum pots. Aluminum pans are painful to me, as my teeth fillings react to the aluminum. With cast iron, you won't have this problem. I also take my Lodge pan camping and set it right over the coals to cook. No melted handles or scorched bottoms to mess with.

5Outstanding, dont let the low price fool you!

Let me start by saying we have a kitchen full of 20+ pieces of Calphalon Hard Annodized Commercial cookware. I was always of the opinion that quality cookware carried a price that was justified by the performace of the cookware. So I thought if I wanted cast iron I should look at LeCreuset... wrong! Lodge blew that theory out the window! I can't express how well this simple pan works. Let it get hot and it will hold the temp like nothing else, oven to cooktop. I finally decided to get a good cast iron skillet after hearing Alton Brown (Host of Good Eats - ...- TV Food Network - ...) rave about cast iron for the last few years. He steared me to Lodge, Lodge's web site (lodgemgf.com) told me about the pre-seasoned "Logic" line. This stuff makes cast iron simple. No messing around with seasoning a new pan. Simple care instructions. And clear instructions to reseason should the need occur. At the price these pans sell, there is no excuse to not have one, (or more) in your kitchen. It will soon become your favorite pan. I bought a 5 quart Lodge Logic Dutch Oven at the same time and it is fantastic as well!

5My new favorite pan

After waiting a month to get the thing because it was back-ordered, I FINALLY got to try out my skillet. I love this thing! Most of my cookware is garden-variety non-stick and hardly suited to things like searing steaks or fajita meat.
You can run this pan as hot as you dare without hurting it - works great for steaks, and makes an awesome cheese steak. The pre-seasoned coating works as advertised, and the cast iron gives good heat transfer and VERY even heat across the entire pan. I think I'm going to be using this skillet A LOT.
A handy suggestion regarding cleaning that I stumbled across on another website... be SURE to use a hot pad while doing this! Immediately after cooking, fill the pan with HOT water (not cold; you could crack it!), put it on high heat, and bring the water to a rolling boil... this will lift debris off the pan bottom. Dump the water and immediately wipe dry with a paper towel, set on the (turned-off) burner briefly to dry completely, and wipe the cooking surfaces with oil.
Another note - want those steaks well-done but juicy? Buy the Lodge Logic 5-qt Dutch oven; the lid fits this skillet! Sear both sides of the steak on medium-high (about 3 min each), then flip, reduce the heat to medium, cover, and cook as desired, flipping the steak once along the way (about 5 minutes per side for a small, well-done filet mignon). Your cooking times may vary, but the combo of cast-iron skillet for searing and lid to keep things moist while cooking works exquisitely. Brown, not black, outside... and tender inside.

At first it was non-stick to the max and I loved it, but after about a week of use (everyday I might add), it quickly lost its non-stick ability even though the coating is still completely intact, no metal objects were used, and it was never cleaned with anything but soap and water - after cooling down completely. In short, I wasted over 30 buck and wish I had never purchased it. How it got such great reviews is beyond me. I usually have great luck using reviews when purchasing a product, but unfortunately where this pan is concerned, I got taken. DON'T WASTE YOUR MONEY! Buy a ceramic coated, titanium infused pan instead. I wish I had.

The first time I cooked chicken in it we were amazed how juicy and flavorful the meat was. Food doesn't stick, it's easy to clean and the coating is non-toxic. Perfect! Love this pan and recommend it to everyone.

I love the textured ceramic non-stick coating and have found that it works great for everything I have cooked in it. I read the directions carefully and have had no problems with anything sticking. I try to cook healthy and it helps to have pans that don't give off toxic fumes or peel off bits of the coating in the food. I know that when the pans are hot, it is a bad idea to put cool or cold water in them (as would be for any type of frying pan). I have ruined several non-stick pans over the past years, letting them get too hot. That will make them bow up in the middle of the pan, and of course the non-stick doesn't work any more. I love my new pans and plan to take very good care of them. It is just common sense to read the directions for how to care for them. I am enjoying cooking now that it is so much easier. Also, using the right utensils is important-- nothing metal goes in my pans. The green color is also nice in my kitchen with my black appliances. I couldn't be happier with these pans. The best I have ever had (and I use them every day and have already given them a good workout).
